With crispy bacon and chipotle chiles, these chipotle bacon deviled eggs are a smoky, spicy take on the traditional dish. Rich egg yolks are combined with acidic mayo and the intense spice of chipotle in adobo to create creamy, delicious nibbles.
Ingredients
- Six big eggs, hard-boiled
- Two pieces of cooked bacon
- Three teaspoons of mayonnaise
- One tablespoon of chipotle pepper adobo sauce from a can
- 1/4 tsp dry mustard
- 1/4 tsp garlic powder
- To taste, add salt and freshly ground black pepper.
- Half a teaspoon of powdered chipotle, or as necessary
Instructions
Place the yolks in the bowl of a tiny food processor after halving the eggs lengthwise; reserve the whites. You can use a fork to mash all the ingredients in a bowl if you don’t have a tiny food processor.
Add one slice of bacon to the egg yolks once it has been minced; cut the other slice into twelve pieces and reserve it for decoration. Mix the egg yolks with the mayonnaise, adobo sauce, dry mustard, and garlic powder until smooth, scraping down the sides of the bowl. Add another spoonful of mayonnaise if the mixture is too thick. Add salt and pepper for seasoning.
Cut off a corner of the yolk mixture after placing it in a resealable bag. Fill egg whites with the mixture. Place chunks of bacon on top of eggs and sprinkle with ground chipotle pepper. Keep chilled until you’re ready to serve.
